One fresh roma tomato, chopped
1/4 cup reduced fat crumbled feta cheese
salt and pepper to taste
Chop tomato, mix with feta, and add salt and pepper if desired. Soooo good for 2 points.

5 Point Chicken Dijon
5 Point Chicken Dijon
1 T light margarine
1 T flour
1 T Dijon mustard (I would double this)
1/2 cup fat free chicken broth
1/4 cup chopped onion
3/4 lb boneless chicken breasts
Melt margarine in a non-stick skillet and brown chicken and onion over medium heat.
Whisk flour and mustard, then add broth and pour over chicken. Cover, reduce heat, and
simmer for 15-20 minutes. I used the thin breasts, so I simmered for about 14 minutes.
Don't over-cook the chicken, people! Serves 2.

Salisbury Hamburger "Steaks" (5 points each) & Parsley Potatoes (3 points each)
This was a HUGE hit at the Pelletier place last night. Enjoy!
Salisbury Hamburger "Steaks"
1 lb lean ground beef
1/2 packet onion soup mix
1/3 c water
1/2 can fat-free beef broth
1/2 can fat-free cream of mushroom soup
4 oz. sliced mushrooms
Combine beef, onion soup mix, and water to form 4 patties. Cook in skillet over medium heat for 5 minutes on each side. Mix broth and soup, heat in small pan over medium low until mixed well; pour over patties. Add mushrooms, cover, and reduce heat to simmer for 30 minutes. Makes 4 servings @ 5 points each

3/4 lb. red potatoes, cubed
1 T light margarine
salt and pepper to taste

Cube and boil potatoes 15 minutes, or until tender. Drain and add margarine, salt, pepper, and parsley. Toss to coat. Makes two servings @ 3 points each.
Serve with leafy romaine salad, chopped tomatoes, Kraft Light Balsamic Vinaigrette for a kid and spouse-pleasing meal!

7 point blueberry pancakes
I had been craving pancakes, but just could not bring myself to "spend" a bunch of points on the type I normally make. So while at the grocery store, I spied a box of Bisquick Heart Smart mix while fantasizing about a short stack from Village Inn! Here is what I came up with, and I have to say, the results were satisfying.
7 Point Pancakes
(makes enough to feed an army, so you may want to half the recipe--full recipe was way too much for the two kids and myself)
2 cups Bisquick Heart Smart mix
1 1/4 cups skim milk
1 egg
2 T Splenda
1 t vanilla
Use a nonstick pan, and heat to medium high. Lightly (emphasis on lightly) spray pan, and using a 1/2 cup size measuring cup, pour a scoop of mix onto the pan. Drop blueberries onto mix and slightly press into mix. Turn when surface gets bubbly--but you knew that, right?! Repeat to make desired amount.
Add 3 tablespoons of sugar-free syrup to pancakes. I use Kroger brand. Two of these, with syrup, is a yummy and filling 7 point breakfast! They are fluffy-type pancakes, but make sure you add lots of blueberries to fill you up! You don't need a lot of syrup because the pancakes are sweet on their own. You can omit the syrup and save 2 points if you like.
**Bonus 0 point coffee recipe: one cup of Keurig-brewed coffee of your choice, 1 Splenda paacket, 1 T Coffee-Mate sugar-free Hazelnut flavor
